Healthy American-style pancakes and excess galore


So far this year has been a year of extremes: the Spring saw more rainfall than we usually see in a whole year, we’ve had easily four times more tomatoes than usual, we have momentous courgette mountains, figs galore and at least 10 kilos of green beans. Black labrador madness doubled for much of the Summer as the neighbour’s puppy came to stay several times. But the prize for excess must go to Lรฉo: on Friday night he broke not one but TWO wrists. He’ll be in plaster for six weeks which will be quite a challenge. Whether the challenge will be greater for me or for him remains to be seen (we had to confiscate his skateboard this morning!)…

These pancakes are full of goodness and perfect for cutting up and feeding to people with two broken wrists, which can come in very handy ๐Ÿ˜‰ . ย Almonds are an excellent source of magnesium and whole milk is a great source of calcium, both of which are essential for, amongst other things, bone health.


65g ground almonds

70g spelt flour

1 tsp baking powder

ยฝ teaspoon salt

1 large egg, beaten

130ml whole organic milk

Virgin coconut oil for frying

Combine the ground almonds, flour, baking powder and salt. Mix with the eggs adding the milk little by little until you obtain and smooth consistency. Heat the coconut oil in a frying pan and spoon about two tablespoons of mixture per pancake. Fry until golden-brown on both sides.

  1. 2 broken wrists! Oh dear oh dear! You’ll be busy for the foreseeable then…! Your pancakes look great…I love the almonds in there. I will have to try them. I am sure they would go down a storm with my kids. Wishing Leo a speedy recovery….for your sake as much as his! x

  2. Oh no! Both wrists broken! Poor thing! I hope he recovers soon.
    On the other hand, the pancakes look wonderful, I hardly ever make them (I am too lazy in the mornings and I don’t really find them appropriate for any other meal, perhaps I should try them on a weekend), but this healthful version is very, very appealing!

  4. Argh! As per all the other comments, poor Leo! I can only imagine how a skateboarding fanatic would’ve broken them. Poor you, trying to keep him out of harms way until they heal! These bone-healing pancakes look amazing. You are so right, a good whack of calcium and magnesium disguised as pancakes is the best kind of medicine ๐Ÿ™‚ Hope that you are well lovely!! x

  5. Poor Leo with two broken wrists…and poor you too! He’s going to one grumpy bored kid for 6 weeks. Pancakes sound like a fabulously healthy option, I’ve finally bought spelt flour in the UK and am loving baking with it (and I LOVE it’s smell!) maybe pancakes next?

    • I’m so glad you’re enjoying spelt flour – it so much tastier than normal flour and more nutritious. Hope you’re settling back into the UK. I bet you’ll miss the view though. Good luck with your new blog – it looks great from what I’ve seen so far…

  9. Your comments about your son made me smile. He really reminds me of my boys. Skate boarding with 2 broken wrists is something they would totally do! Boys! You gotta love em! I hope his wrists heal quickly. These pancakes would make anyone feel better!:)

Mark promised him teddy bear shaped pancakes for breakfast last Saturday – came downstairs, iPad next to all the flour, healthy epicurean on the screen and gingerbread cutters at the ready (no teddy bear shapes in our house)!
