    Cep sauce, dogs in therapy, and therapy dogs

    Hugo is not feeling the love for Lockdown Strikes Again. I’m pretty sure he has PTSD following an intense two months in the Spring with eccentric humans and flamboyant and immature fellow animals. Hugo, like many great intellectuals, is a bit of a loner; company 24/7 leaves him frazzled to say the least. When Léo left to go back to Bordeaux to school last weekend, Hugo commandeered the front seat of his car and nothing would make him budge. He thought that Léo’s company, albeit in a city, was preferable to what we had to offer.

    Luc is currently spending most of his waking hours scaling the roofs. He has become a fanatical adversary of skulking moss, to which he lays seige armed with a rock climbing harness, knives and poison. Apparently he finds moss assassination cathartic, which is unfortunate because seeing him on the roof does nothing for my serenity. In twenty years’ marriage I had never realised what strong feelings he had on plant fungus.

    My thyroid has gone haywire which leaves me burning up like a furnace, insomniac, and putting away teenage boy quantities of food. Dogs really do have a sixth sense, and every time I sit down, Java climbs up to ‘comfort’ me, which is very sweet and definitely more therapeutic than scaling the roof.

    Health benefits of ceps

    Ceps, once cooked, are rich in anti-oxidants which help support the immune system. They are also a good source of vitamin D; a single serving can supply about 30% of your daily needs. Ceps contain high levels of folic acid and vitamin B12, and help detoxify the liver. And finally they contain a good amount of potassium which contributes to cardiovascular health.

    Recipe for cep sauce

    • 2 shallots, finely chopped
    • 1 tablespoon olive oil
    • 10g butter
    • 75ml dry white wine
    • 75g fresh ceps (or dried and soaked)
    • 2 cloves of garlic
    • 2 tablespoons Armagnac (or Cognac)
    • 1 teaspoon chicken or vegetable stock, diluted in 5 ml water
    • 2 tablespoons crème fraîche
    • Sea salt and freshly ground black pepper

    Gently brown the shallots in the for a couple of minutes. Add a drop of white wine and then add the ceps and garlic. Leave to cook gently for about 20 minutes, stirring often. Add the remainder of the wine, the Armagnac and stock and then the cream. Season and leave to simmer for a further 15 minutes, or until thickened. May be liquidised for a smoother sauce.

    This sauce makes a great accompaniment to steak, or any red meat. It’s also delicious on pasta.

    Plum jam and a cast-off animal sanctuary

    Four pigeons have found themselves a new home, and we’ve once again struck gold in the animal lottery. Apparently word is out that we’re a dumping ground for problem animals, and we’re so grateful to the hunters that arrive bearing ‘gifts’. I think. Java, bless her little heart, was given to us because she was ‘destabilised’, by which I mean completely off her trolley in terror, by guns. Not ideal when you’re a gun dog. And Hugo came to live with us having been found roaming the streets of Dax aimlessly like a yobbo.

    We have an awful lot of resident toads as well. We have become the destination of choice for amphibians: Club Toad. And bizarely, my husband has an absolute passion for them, something that I’ve only recently become aware of after 20 years. He talks to them, strokes them (although I’m not sure that ‘stroke’ is the right word for a toad), comforts them, and helps them out of the pool when they get marooned. Should I be concerned?

    Back to the pigeons. The hunter that arrived with them in a cage earlier this week felt ‘they would be better off with us’ (they had been squatting and squarking outside his bedroom window). This was a polite way of saying that they were doing his head in and could we take them off his hands before he shot them, or possibly himself.

    I’d never really thought about just how annoying pigeons are. I grew up with the pigeons in London (just to be clear: I lived in a house with my parents, not perched on the edge of the fountain in Trafalgar Square), but country pigeons are a different kind of annoying. Town pigeons spend their time pacing up and down streets, accompanying people here and there, and being totally unable to fly. Not so with country pigeons, who are unbelievable noisy, messy, hyperactive busybodies. I have to admit though, when I count only three of them eating breakfast with the horses, I find myself worrying about where the fourth has got to…

    Plums are full of nutrients: One medium-sized fruit contains over 100mg potassium, which helps manage high blood pressure and reduce stroke risk. They are also a rich source of vitamins C and K as well as manganese, magnesium and copper.

    Plums are rich in antioxidants, which are helpful for reducing inflammation and protecting your cells from damage by free radicals. They are particularly high in polyphenol antioxidants, which have positive effects on bone health and thanks to their ability to increase levels of adiponectin in the body, they are also a delicious way to manage blood sugar levels.

    Recipe for plum jam (makes 6-8 pots)

    • 1.75kg red plums
    • 500g greengages
    • 600g black grapes
    • 400g fresh figs
    • 1kg cane sugar
    • 1 apple, grated
    • 20g fresh ginger, grated
    • 1 lemon, juiced
    • 50ml dark rum

    Cut the plums and greengages in half, remove the stones and place in a large pot. Rince the grapes and figs and add to the pot. Add the grapes and the figs and then the sugar. Last of all add the grated apple and ginger, bring to the boil and then simmer for 30 minutes. Once cooked, add the lemon juice and rum. Liquidise according to taste and transfer to sterilised jam jars while still hot.

    Bossy seems to have had a lot to say of late (lucky, lucky you!), so my writing skills have not been required. Having tested almost two months’ confinement, I have come to the conclusion that it is NOT for me. There are too many people, too many animals, too much noise, too much barking (human and canine) and far too much proximity. I really love it when they go out all day, which of course, they haven’t been doing.

    To add insult to injury there are the haircuts (I use the term loosely). First Bossy did her poor husband’s hair. He kept telling her to ‘hurry up and stop dicking around’, which I though was a bit curt, although in fairness I can see why he was irritated; she kept collapsing into fits of uncontrolled giggles as she realised how asymmetrical he was. Every time she tried to straighten him up, things got worse because her glasses were misted up from crying with laughter. She ended up with hiccups and a wonky, irrate husband.

    She also ‘did’ Java, who was uncooperative to the nth degree, probably because she’d witnessed the Great Husband Massacre. To cut a long story short (see what I did there?), Java, Bossy and the scissors ended up in the dark under the stairs. Thankfully Java’s coat is naturally long and messy so you can’t really tell the difference. Same goes for Bossy thinking about it. In fact, I’m not 100% sure who cut who’s hair.

    Léo and I have managed to resist Bossy and the scissor threat so far. Léo just stands up any time she starts eyeballing his shoulder-length locks. And once he’s up, she’d need a stepladder to get anywhere near his head so he’s safe. Especially as she’s afraid of heights. I just growl menacingly if she so much as gazes in my direction, so I’m sorted too. I just hope she doesn’t come for us while we’re asleep…

    These cookies are testament to the fact that Bossy is much better at baking than hairdressing.

    Recipe for coconut cookies (gf)

    • 100g chickpea (gram) flour (also works with regular flour)
    • 25g desiccated coconut
    • 1 teaspoon baking powder
    • Pinch of salt
    • 80g coconut oil, melted
    • 80g cane sugar
    • 2 tablespoons rum
    • 1 teaspoon vanilla
    • 1 egg, beaten

    Preheat the oven to 190°C. Sift the flour and coconut into a bowl, adding the baking powder and pinch of salt. Add the melted coconut oil, mixing well and then the sugar. Lastly add the rum, vanilla and beaten egg, mixing thoroughly.

    Make roughly 12, 2cm dough balls with the mixture and then flatten them on to greased baking trays, leaving a bit of space in between each one. Bake for 15 minutes and leave to cool.

    Radish top soup and hot air and bubbles


    I love our dogs, I really do, but they’ve been doing my head in during this Sahara Bubble. Yesterday they kept forgetting just how hot it was outside, which meant that I spent the better part of the 41° heat of the day and early evening playing ‘Doors’, when I should have been prostrate with a cool compress on my head, perusing my book about expeditions to the South Pole to conjure up ice-cold thoughts. The rules of ‘Doors’ are quite simple: you run between the back door and the front door, alternately letting in and out hot, panting dogs with very short memories.
    You might be wondering why I don’t exercise a bit of authority (LOL – you and I have obviously never met), and tell them to stay put, but Hugo would head butt the door until he knocked himself unconscious, and Java would do her standing-on-hind-legs routine and end up falling over backwards, also knocking herself unconscious. So tempting, but no. And then this morning, to add insult to injury:  You know those hilariously funny videos you see of dogs rolling in wet, sticky mud coming back coated from head to paw? Java. Not hilarious. That’s all I’m saying.
    While I was jet washing the muddy kitchen floor, Luc ‘phoned from the supermarket to say that he had put his trousers on back-to-front (he realised when he tried to put his wallet in his pocket and it fell to the floor). He had to waddle back to the car to wrestle them off and back on again the right way. Give me strength. On a positive note at least it’s a bit cooler today.
    As I was far too hot and exhausted to go shopping yesterday, I made this soup with radish tops from the garden. It was more of a success than my dog disciplining attempts, which is admittedly not difficult. Radish greens contain a high concentration of vitamin B6, magnesium, phosphorus, iron, calcium, and vitamin A.
    Ingredients (serves 6)
    45g butter
    1 onion, peeled and sliced
    2 shallots, peeled and sliced
    2 garlic cloves, crushed
    3 bunches radish greens, rinsed
    2 large potatoes, peeled and sliced
    1l chicken stock (or vegetable if you prefer)
    1 teaspoon paprika
    Sea salt and freshly ground black pepper
    4 tablespoons crème fraîche
    Melt the butter in a large saucepan over a medium heat. Add the onions, shallots and garlic, fry for about five minutes, stirring occasionally to prevent sticking. Add the radish tops and potatoes, coating in the butter and cook for a few minutes longer. Add the stock and seasoning and simmer for about 20 minutes, or until the radish tops and potatoes are soft. Blend the soup until smooth and add the crème fraîche.

    Our cat, Minou, is tiny, opinionated and ferocious. Hugo has, in the past, tried to take him on – on the premise that he is top dog – but quickly thought better of it; he knows when he’s beaten. Java sometimes tries to play with Minou – on the premise that she is as daft as a brush – but it invariably ends badly for Java.

    Yesterday Luc and I were standing on the lawn discussing the horses’ hooves, as you do. Hugo is always irrationally put out when Luc and I talk to each other outside (I’m not sure why), and doesn’t hesitate to let it be known. Yesterday, he showed his exasperation by sitting on my feet and boxing my legs with his paws. This, of course, provoked Java (because my legs belong to HER), and she torpedoed Hugo, threatening him with her tiny, bared teeth. Next it was Minou’s turn to be annoyed (manifestly, he is the only one allowed to attack Hugo), and he launched himself between the two dogs, intercepting and separating in a matter of seconds, like a particularly effective anti-ballistic missile.
    Which begs the question: is this normal or is our cat a total psychopath?
    I always love making this casserole in the spring. It’s satisfying, yet light and fresh. And making it takes my mind off my unstable animals.
    Ingredients (serves 4)
    1 tablespoon of olive oil
    1 onion, sliced
    4 chicken thighs
    2 glasses of dry white wine
    450ml chicken or vegetable stock
    10 baby carrots (or 4 normal carrots ‘julienned’)
    4 small leaks, rinsed and sliced
    4 small turnips, peeled cut
    Sea salt and freshly ground black pepper to taste
    1 bay leaf
    ½ teaspoon paprika
    ½ teaspoon fenugreek
    1 courgette, cut into rounds
    80g of peas (either shelled or frozen)
    Fresh mint, chopped to garnish
    Preheat the oven to 180°C. Gently brown the onions in a casserole dish in the olive oil. Add the chicken and brown gently for a couple of minutes. Add the wine and stock and bring to a simmer. Add the carrots, leaks, turnips and seasoning. Cook for an hour in the preheated oven and then add the courgette and peas, making sure that there is still enough liquid. Cook for a further 20 minutes and add the fresh chopped mint just before serving. Delicious served with new potatoes.

    Watercress soup and disarray at dawn


    I have to get up far too early at the moment; it’s still dark  which makes it the middle of the night in my book. Java has become a bit of an early bird and launches herself at me like a little, blonde heat-seeking missile as soon as I come downstairs. I have to let her out quickly because she has work to do.  She has taken to ‘rearranging’ the scruffy pile of shoes that hangs out on the doorstep, depositing them thoughtfully and poetically on the grass in front of the house. This morning she outdid herself: She took each shoe and dunked it in the river before laying it out to dry on the grass. Getting ready to leave in a rush is fun when it involves having to retrieve a pair (preferably, although I have on occasion resorted to wearing odd shoes) in my size, which is  neither too soaking wet nor chewed to pieces. You might think I’d be inspired to tidy the shoes away, but no. I can’t tell her off because it causes her to develop a very bad limp and disappear for hours.
    When Luc gets up I have to ‘talk him down’ with regard to whatever weird dreams he’s fallen victim to during the night. It’s asparagus season, and for some reason eating asparagus in the evening has much the same psychedelic effect on him as a large plate of shrooms. This morning he was quite distraught at how France had suffered despicable referee bias during a France/Spain football match. He was obviously thinking in terms of retribution, because he asked me lots of detailed questions about disposing of bodies in concrete, which is just the ticket when you’re eating your porridge. This is obviously my specialist subject so I was happy to provide him with particulars. A few nights ago, there was a coup d’état in Argentina, which he was called upon to fly over and sort out, taking me along as his interpreter. I’m still worrying about how that would have turned out.  Thank goodness for small mercies: Hugo and Léo are far less complicated in the morning because neither of them communicates until after midday.


     
     
     
     
     
     
     
     
    Watercress contains enormous quantities of vitamin K, but also vitamin C and vitamin A.  It contains the minerals manganese, iron and calcium and flavonoids such as beta carotene, zeaxanthin, and lutein.  It is a good source of B-complex vitamins.
    Ingredients (serves 6)
    4 potatoes, peeled and chopped
    2 turnips, peeled and chopped
    2 onions, peeled and sliced
    2 cloves of garlic, crushed
    1 tablespoon olive oil,
    Freshly ground black pepper, sea salt,
    1 teaspoon paprika
    4 bunches of watercress, well rinsed and chopped
    600ml organic stock
    Crème fraîche
    Heat the olive oil in a large saucepan, adding the potato, turnip, onion and garlic.  Fry until translucent. Add the seasoning, watercress and the stock and simmer for about five minutes. Blend until smooth and serve with crème fraîche.

    Oatcakes and small lazy animals



    Bossy is currently embracing her inner sloth (her excuse is that she has the flu). I would like to say it makes for a peaceful house, but I’d be lying. She screamed at the Tallish One (you may remember I can’t call him The Tall One anymore because The Noisy One has overtaken him by 10cm) this morning to ‘call the  doctor and order him to get rid of this f**king bullshit virus’. So that was reasonable; silent, or even gracious, she is not. Apparently she has very low blood pressure (not that you notice, mind you), which gets worse when she’s ill, which amusingly enough means that when she tries to stand up she collapses. This has the advantage of shutting her up momentarily, although it doesn’t make her any less stroppy. I wouldn’t like for her to actually hurt herself collapsing (she has quite a lot of form with collapsing and broken bones), but needs must.
    It is a well-known fact that when you’re ill, you need a sturdy dog to sit on your feet to keep you warm (and give you pins and needles and cramp). As I’m sure you’re all aware, I take my duties very seriously and carry out this role to the fullest, however time-consuming and unpleasant it may be. The trouble is, Java thinks it might be her duty too (when it suits her and when she’s not off doing things of little consequence). This means that we both end up sitting on Bossy who gets thoroughly overheated and panicky and red in the face and I have to throw Java off and we all end up in a growling, feverish heap on the floor. I’m absolutely wrung out; I hope we’re back to business as usual soon because this flu malarky is getting on my nerves.

    Ingredients (makes about 12 oatcakes)
    225g rolled oats
    60g chickpea flour (or any other flour)
    1/2 teaspoon bicarbonate of soda
    60ml olive oil
    Large pinch of salt
    80ml hot water
    Preheat the oven to 190°C. Combine the oats, flour, bicarbonate of soda, olive oil and salt well and then gradually add the hot water until you have a thick doughy mixture. Roll out the mixture and use a cookie cutter (or upturned glass) to make the cakes. Place the cakes on a greased baking tray and bake for 20 minutes or until golden brown. Leave to cool.

    Smoked mackerel pâté and broken



    We have broken our cleaning lady. Or to be more exact, the dogs have broken her. She’s never been their biggest fan; she believes that a dog’s place is outside and silent at all times. Personality and opinions, particularly dogmatic ones, should not be tolerated. If you’ve been reading my blog for a while, you’ll know that this just isn’t how we roll with Hugo and Java. Or at least, it isn’t how Hugo and Java roll with us.
    I do see that it must be frustrating for her, especially when all the dogs within a two kilometre radius rock up for a ‘social’ when she’s trying to hose down the floors. They seem to sense the optimal impact moment to put in an appearance. And, in fairness, I do always say that cleaning our house is a bit like mucking out a stable. Anyway, this morning the hounds outdid themselves. The mild weather meant that the windows were open and Java, terrified witless by the vacuum cleaner, kept jumping out of the window, spent just enough time outside to dirty her feet and returned into the house through the front door. Ad infinitum. Hugo, who had been invited (you don’t give Hugo orders; you make suggestions) to stay outside in a bid to reduce the carbon paw print, availed himself of the open window in the other direction to come back into the house (filthy paws and all) in order to launch a vicious assault on his long-standing nemesis, the hoover.
    Happily, I wasn’t there this morning to witness this outrageous exhibition of doggie hooliganism. I did come back in time to be greeted by two manic, crack cocaine-smoking dogs and Luc administering medicinal Armagnac to treat the cleaning lady’s shattered nerves.
    Ingredients (serves 6)
    400g smoked mackerel, skin removed
    1 ripe avocado
    2 shallots, peeled
    1 clove of garlic, peeled
    Juice of 1 lemon
    1 tablespoon olive oil
    4 tablespoons horseradish
    Sea salt and freshly ground black pepper
    1 teaspoon paprika
    Place all the ingredients in a food processor and combine until smooth. Chill for at least two hours and serve with either crispy French bread or raw vegetables (carrots, celery, fennel…)

    Commendations and sabbaticals



    Bossy’s chronic disorganisation means she’s in her usual pre-Christmas frenzy, so I doubt you’ll be hearing from her any time soon (you lucky, lucky people). As improbable as it sounds, she and her blog have been chosen to feature in Brandballot’s top 150 food blogs for 2018. I suspect it’s thanks to my help, although I’m obviously too gracious to point that out to her. Anyway, in case you’re interested, you can find her blog, and other far superior food blogs here
    I’d like to take this opportunity to wish you all a very happy christmas because, as usual, I shall be moving out for the festive period, hopefully before the vulgar tree monstrosity appears. They insist on installing it right next to my bed, flashing lights and all, just to annoy me. The flashing lights play havoc with my already shredded nerves, and the tinsel and glitter make me sneeze; I’m allergic to tasteless bling. All in all the general ambiance becomes unbearable: Gaudy decorations make Java even more hyper than usual (I’ve recently decided she’s really just a barking cat), and Bossy just needs to glimpse a glass of champagne from across the room to become even louder and more tiresome than usual.
    Despite my mini sabbatical, I’m not averse to presents. I know that Bossy thinks it’s a bit extravagant, but I’ve asked for a new iPaw; it’s more than justified, what with my ever-increasing workload – which obviously includes piles of fan mail –  to deal with.

    Chicken soup and unruly hair


    My hair is a free-for-all, to be chewed on, judged and discussed without compunction or reserve. I’m asked on a regular basis if it’s natural (because you think I would I chose it?), if it’s wet, if it’s dry, if it’s just been to the hairdresser and if it hasn’t. In some parts of the world, people come and stroke it like a strange woolly pet. A rather uncharming old lady who lives nearby actually uses the word ‘mop’ when referring to it, which she does every time I see her. And Luc said the other day ‘it just really suits you – it’s chaotic’. This was meant as a compliment (wtf?). The assistant in a posh haircare shop not long ago suggested, without a hint of irony, that I could ‘always try using a comb’ when I asked for advice on how to tame it. And to add insult to injury, Hugo chews on it in much the same way that he chews on Java’s ears.

    A number of studies have been conducted on the usefulness of chicken soup (aka Jewish penicillin) in warding off and treating cold and flu viruses. It appears that the soup inhibits the movement of neutrophils, the most common type of white blood cell that defends against infection. The theory is, that by inhibiting the migration of these infection-fighting cells in the body, chicken soup essentially helps reduce upper respiratory cold symptoms by reducing inflammation.

    The researchers couldn’t identify the exact ingredient or ingredients in the soup that made it effective against colds but say it may be the combination of vegetables and chicken that work together.

    Make what you will of the research, but at the very least, chicken soup with vegetables contains lots of healthy nutrients, is easy to digest, increases hydration and tastes delicious.

    Ingredients
    1 tablespoon olive oil
    2 onions, peeled and chopped
    2 shallots, peeled and chopped
    3 cloves of garlic, crushed
    2 leeks, washed and cut into rounds
    1 fennel bulb, washed and cut
    1/2 butternut squash, peeled and cut into cubes
    4 carrots, peeled and cut
    200g cabbage, shredded
    1 red pepper or chilli pepper, cut into strips
    2 sprigs of thyme
    1 teaspoon fresh ginger, grated
    2 teaspoons turmeric
    1.5 litres chicken stock
    2 tablespoons Pernod (optional)
    300g pre-roasted chicken, skin removed and shredded
    100g frozen peas
    2 serving of pre-cooked brown rice
    Sea salt and freshly ground black pepper
    Gently brown the onions, shallots, garlic and leeks in the olive oil in a large saucepan or casserole dish. Once browed, add the fennel, butternut squash, carrots, cabbage and chilli pepper and continue to cook for a few minutes. Add the thyme, ginger, turmeric, chicken stock and Pernod and bring to a simmer. Once the vegetables are almost cooked, add the chicken and frozen peas and continue to cook for another ten minutes. Add the brown rice towards the end of cooking, season with the salt and pepper and serve piping hot.
