Peach pancakes and feeding frenzy

We have a neighbour’s dog to stay at the moment and also a new young horse, bought on the admittedly shaky premise that one can never have too many horses. As it’s very hot, I got up extra early this morning to feed/medicate/placate the animals and felt really rather virtuous. More fool me. I fed the foal, not forgetting his ‘growing horse’ supplement, extra virgin olive oil and generous application of sunblock to his nose, and gave the hens their corn. I then fed the dogs, each of which has a different food and quantity. Feeling quite proud at having fed 12 animals in under five minutes, I returned to the kitchen to prepare my own ‘feed’. Glancing out of the window, I saw the 31-year-old retiree, having appeared from nowhere, polishing off the foal’s feed; the foal was happily sharing the hens’ whole corn kernels, sun-blocked nose to the ground; Hugo was making impressive headway through the guest’s bowl; Java was inhaling Hugo’s ration, which left our poor guest who is far too polite to kick up a fuss, with a small bowl of puppy food. The moral of the anecdote is this: if you’re under the impression that you’ve been unusually quick and efficient, think again…
Ingredients (makes about 8 pancakes)
3 eggs, beaten
250ml almond milk (or normal milk)
100g ground almonds
150g spelt flour (or normal flour)
1 teaspoon bicarbonate of soda
Pinch of sea salt
3 peaches, peeled and cut into rough cubes
1 teaspoon garam masala
Coconut oil for frying (you could use butter)
Mix the eggs with the milk. Sift the ground almonds, flour, bicarbonate of soda and salt together in a bowl and gradually add to the egg/milk mixture. Combine well and add the peaches and garam masala. Refrigerate for at least an hour. Heat a teaspoon of coconut oil in a frying pan and drop a large spoonful of pancake batter into the pan. Cook until golden brown, flip and repeat.

    Oh my. well you certainly can be proud of your accomplishment but there is no way to avoid the whims of everyone in your brood. Isn’t it always the case that there is a strong attraction to what someone else has, it must be better. The cats I feed do the same, I give them both the same food but they it seems instintually go for the other cats bowl.
    Yummy peach pancakes, the garama masala is a wonderful addition.

      Thank you! I must say that the garam masala does add another dimension – and they’re really fresh and summery! Animals are so contrary aren’t they? But when I think about it, so are humans… How many times in a restaurant have I lustfully looked at what my dining companions have ordered… 🙂

    This sounds like a real treat and we’ll give it ago, as soon as it cools down enough to turn on the stove. 40C in the shade at 10:30h, and 32C at midnight, for five days, so far, with no let up in sight. Yes, the AC is working, but I don’t tempt fate during a heatwave, by turning on kitchen appliances. Salads, fruits, nuts and such make a nice change for my partner, although I hear grumblings from that direction sounding disturbingly like my carcass finding itself on the barbecue, soon.

      It is a treat! I agree about not wanting to turn on the oven, although I do still use the hobs… We cook everything else outside at the moment, which is nice because it means that I’m not in charge (I don’t have my BBQing ‘licence’ i.e. I’m not a man!) Keep cool!

        Ahhh, the barbie. I have the proper chromosomes, but I am still not allowed to tamper with M’s outdoor cooking station, and thankfully so, as it does for me what it does for you – relieves us from a necessary chore.
        It cooled down enough this morning to allow a bit of trimming in the garden, but I am not taking any chances, since it was still 90F in the shade by 10:00h.

          I like to perpetuate the likelihood that I would set fire to the garden and surrounding forest if left in charge of the barbie; it makes for a very relaxing summer! It sounds like it’s even hotter with you than it is here. This morning it was 19°C – bliss! 🙂

            Today was the ‘easiest’ day in the heat that we have had for more than a week. I could actually go out to the mailbox without falling over from the heat. We were told we might get rain, but it passed us over. It’s still better than it was…but, the AC is doing its thing nicely, so I won’t interrupt.
